Not only is chimichurri sauce delicious but it’s also healthy for you, I love when that happens! The ingredients in Chimichurri Sauce make it a healthy addition to almost any meal. Like the guy from Franks Hot Sauce says…I put that sh*t on everything. We served this Chimichurri on Christmas with our meal and it was a crowd favorite.
Parsley is high in vitamin C and also gives you calcium, iron, vitamin A and carotenes. Garlic one of chimichurri’s main ingredients, is reputed to be a heart-healthy herb. Garlic may help prevent atherosclerosis, hardening of the arteries, which is the most common cause of heart attack and stroke. Oregano is anti-inflammatory properties.
Chimichurri Recipe:
1 shallot, finely chopped
4-5 garlic cloves, thinly sliced or finely chopped
½ cup red wine vinegar
1 tsp. kosher salt, plus more
½ cup finely chopped cilantro
¼ cup finely chopped flat-leaf parsley
2 Tbsp. finely chopped oregano
¾ cup extra-virgin olive oil
Combine in a food processor and pulse. Chimichurri is best served just after it’s made, but if you have any left over, the sauce will hold in the refrigerator for a few days. Use to top roasted chicken, grilled tofu, oven-roasted potatoes, fried eggs, or almost anything else!
